Also I already have monitors, mouse, keyboard and speakers.

My main question is that is the power supply going to produce enough for all my components etc?

Might need more power later on like 550 or higher especialy if you are going SLI but if you going SLI with the 7800's it should be fine

I like your CPU choice i am getting it myself (Got it yesterday )

COmp is probably going to be great for video editing and gaming no problems that i can see

you have more system ram to it the better for Graphic editing.

it be easyer on the system and the system will love you for it.

you can have a super video card with the ram max out on it but the mother broad ram is what is really needed do to the program editing will need more or the system will slow down a lot when your save a item or formating some images or video.

Number of DDR2 Slots 4x 240pin DDR2 max 4GB your mother will handle sweet .

FSB 1066/800MHz {Sweet} nice pick
they cost a lot
keep that in mind
============================
My MOB RAM>
Memory
Four 240-pin DDR2 SDRAM DIMM sockets
Support for DDR2 667, DDR2 533, or DDR2 400 MHz DIMMs
Support for up to 4 GB of system memory
