Bought a new knife

I have an intrest in cooking and knifes for cooking and recently bought a new knife to the collection. Love Japanese knifes and this knife is no exeption as it's made in Japan and was made by Fujiwara Teruyasu and sold by JCK (japanesechefsknife.com) and it's a cooperation between JCK and Fujiwara Teruyasu. And they are compleetly hand forged, he also does everything from the first bit of metal to finnished knife in one place



I can't wait till I get it!

I went to a fancy Japanese restaurant once in which the crazy Japanese people did tricks and such with their knives.

I always wondered how many fingers wound up in the noodles. You'd never know.

The wife and I received a set of someZWilling knifes as a gift this year. I have to say they are some very nice knifes. We did have to compliment the set with some nice Chicago Cutlery knifes. Having some nice knifes around the house is nice. I am a big fan of the butcher knife, it slices a roast like hot butter.

Nice knife btw!

Agree with that, growing up the only had cheapy knives that were never sharpened and I never knew anything different, soon as I bought a decent set it was almost like my life had changed

We had one extreemly sharp knife in the house as I grew up and that was my dads butcher knife, i think he got it when he left his job as a butcher but not sure. I do remember however that we ware not allowed to use it It was a great knife and used it a few times when I had grown up and was allowed to use it and my dad really kept it super sharp. Think it's gone now

These arn't as good as a real butcher knife cutting meat (well not the one I have bought before, will update on the new one when it arives ) but veggies are cut like you're cutting through air

This knife is hardened to 64 and has a core of White Steel #1 which is a really good quality steel , it's three layers, two sainless with a core of White #1 (carbon steel)

First thoughts: It's atleast sharp enouch to use as a razor to shave

Sounds like a good buy!

Being a machinist and understanding metals and the knife making process the folded method of knife making (layers) is the best process for knife making. I work daily with carbide (carbon) cutting tools and I know with experience that carbon (or carbide) cutting tools are the sharpest and hardest materials. But the downside to carbide (carbon) is that it is very easy to break or chip, so be very carefull to protect your knives when in use and in storage.

You should have a long life with your knives as long as you protect your investment.
