getting read of the stock maps

How do I get read of the stock maps so I can serve only my custom maps?

You mean removing them from the map cycle?
First you need a utility to do that; get it here, http://www.dfhq.net/?show=utilities&cmd=file&id=202
and install it....and the rest will tell you how to do the trick.

you might need a separate folder for your custom maps.
