You do have a HDR mode on every camera that allows you to set the exposure time. Basically you take a photo where you overexpose the highlights but which gives you detail in the shadows, take another for the mid-range and one which gives you detail in the highlights.. You combine these into one image that gives you detail in all areas. That's really all there is to it.. And it's really nothing new or fantastic.
Personally I think most HDR shots look rather silly, but that's me.
