Are these good? Have you tried any of them? The last one is quite a bit softer steel then the first, not sure about that last one. Noticed that several manufacurers in Japan use Swedish Steel

and after years of searching for a decent way to sharpen my own knives, i've come across it. i bought this kit online that comes with two wheels. they're both dense cardboard wheels, but one has a grit on it that sharpens my knifes really well, and the other doesn't, and is used for polishing the blade.
three passes on each side of the blade and it'll make it sharp as all hell.. only thing was i needed to go out and get a cheap motor to spin the two wheels

Yeah I've seen those too, been thinking of teaching my self to sharpen knifes on whet stones. I would need a knife for chicken and fish aswell as these are not made for it, they're too thin

But the whole knife part, I never got that in depth with cooking to start choosing that kind of stuff. Plus I still live with my dad so I just use w/e utensils we have in the house.

Yeah I had about the same though and about the same reson I didn't peruse it. I'm happier to just privetly cook and enjoy it with out having to force out 40 plates of food at one single time during rush hours. Just don't see the apeal in it
