They have a pretty decent impact on performance and stability.. I tested this myself by putting an ASRock (Budget board) into my second computer in place of my abit AN8 ultra with all the same parts except the mother board.. It wasn't that much slower, but it was.. I could defiantly see the difference in loading applications.. I don't think the most expensive is necessary, but a nice board is never a bad thing to have. The ASRock is stable as a rock tho
